Pork Casserole

A rich casserole of pork cooked with apple, cider and beans

Preparation time: 30-40 minutes

Ingredients:

500g diced lean pork
2 tbsp vegetable Oil
1 large onion
1 large carrot
1 leek
2 sticks celery
2 firm green apples
1 bottle dry cider
1 tbsp tomato puree
3 tbsp plain flour
400g can butter beans
400g can haricot beans
2 tsp Worcester sauce
1 tbsp Cider vinegar

Instructions:
  1. Pre-heat oven to 160°C/Gas Mark 4. Cut the onion, celery, carrot and leek into approx. 10mm dice.
  2. Season 2tbsp of the flour and use to coat the diced pork, shaking off any excess. Heat a heavy casserole dish and add the oil. Add the pork and brown all over, remove and set to one side.
  3. Add the diced vegetables to the casserole and cook on a medium heat for 5 minutes stirring regularly. Add the remaining flour and stir in well.  Add tomato puree, Worcester sauce and the cider and mix well. Put the pork back in to the casserole and any juices. Grate the apples and add to the pan. Add 568ml of water and the cider vinegar, stir and cover.
  4. Place into a pre-heated oven for 2 hours. Drain the beans and add to the casserole, cook for a further 30 minutes. Check seasoning.


    Serve with roasted root vegetables and parsley potatoes.
