Sausage, bacon, cider and squash casserole

8 lower salt pork sausages
250g low salt bacon
1 medium white onion finely diced
2 medium carrots finely diced
1 large butternut squash peeled and diced
300ml dry cider
1 tablespoon of plain flour
1 desert spoon of tomato puree
1 chicken stock cube

  1. Pre heat the oven to 160c/300f/gas mark 4.
  2. Add 1 tsp oil to the casserole dish and brown the sausages over a medium heat and then set aside.
  3. Dice the bacon and put into a casserole dish with the diced onion and carrot, cook on a medium heat until the bacon is well cooked, add the flour and mix in well.
  4. Add the tomato paste, stock cube and cider and mix in well, add the sausages and butternut squash.
  5. Add enough water to just cover, season with black pepper. Place the lid on the casserole and cook in the oven for 2 hours.
  6. Serve with boiled new potatoes and steamed cabbage.
