Pork Ribs

Slow cooked with a sweet and sticky BBQ sauce…

Preparation time: 1 hour 45 minutes

Ingredients:

1 Kilo of Pork Ribs
200ml of Apple Juice or Cider
1/4 teaspoon salt
1 clove garlic, minced
1 dash hot sauce, such as Tabasco
1 tablespoon cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons dark brown soft sugar
120g (4 oz) ketchup
1/4 teaspoon mustard powder

Instructions:
  1. Place the Ribs into a roasting Dish along with the Apple Juice or Cider, cover with Foil and Place into a pre heated Oven at 150c Fan or 170 non Fan. Cook for about an hour and a half with the foil on.
  2. for the Sauce – In a small saucepan over a medium heat, stir together the ketchup, sugar, Worcestershire sauce, vinegar, hot sauce, garlic, mustard powder and salt. Bring to a simmer, then remove from heat and allow to cool slightly before pouring on your Ribs
  3. Remove the foil from the ribs, Pour the cooking juices into a pan and reduce by half, pour this back over the ribs along with enough BBQ sauce to coat each rib. Place back in the oven for 10 – 20 minutes until the sauce has evenly coated the ribs and Glossy and Sticky.
  4. Serve immediately with some roasted Corn on the Cob and a big chunk of Crusty Bread.
